Cream
of Mushroom
300 gms
mushrooms
50 gms butter
50 gms flour
3 cups stock/water
1 cup milk
Salt and pepper to taste
Chop
mushrooms finely. Heat butter and fry mushrooms and
stir in flour and remove the pan from the heat. See
that the mushrooms are not discolored. Add gradually,
water and milk. Reheat and bring the soup to a boil.
Add salt and pepper and serve hot.
Tomato
Milk Soup
Melt in a
saucepan 2 tbsp butter. Stir in 1 tbsp flour. Stir in
slowly 4 cups milk. Add salt and pepper to taste. This
makes the white sauce.
Cut into
large pieces and boil with a little water till soft:
1/2 kg tomatoes
1 large onion
Put
through a seive to make a pint of pulp liquid.
Add the white sauce before serving. Serve with square
pieces of deep fried bread.
Vegetable
Soup
1 potato
6 beans
2 carrots
1 tomato
1/2 cup peas
1 onion
1 tsp butter
Salt and pepper to taste
Boil the
above in 3 cups of water. Once cooked, seperate the
vegetables from the water. Blend the cooked vegetables
in the mixer. Add to the water.
Take a
pan. Add 1 tsp butter.Take 1/2 an onion. Chop finely.
Fry untill onion is transparent. Add the mashed
vegetables and bring to a boil.
